Kitchen corner: Egg & Plantain Frittata by Chef Winifred on #WakeUpNigeria

Chef Winifred of @zeeliciousfoods in company of Mary, spiced our morning with delicious ‘Egg and Plantain Frittata’ on #WakeUpNigeria




  • Thyme
  •  Ground pepper
  • Garlic cloves
  • Bulb onions
  • Seasoning cubes
  • Vegetable oil
  • Salt
  • Ripe plantain
  • Eggs
  • Fresh tomatoes
  • Red bell pepper
  • Green bell pepper
  • Sausage
  • Curry powder


To fry plantain

-Heat oil in fry pan

– Add sliced plantain in hot oil and fry till its golden brown

For filling:

– Sautee onions in hot oil for about 30-45 seconds

-Add diced tomatoes and stir for 1-2 mins

-Add sausages, curry, thyme,seasoning cubes, ground pepper & salt. Allow to cook for 2 mins

-Add the scotch bonnet, red & green pepper

To make Frittata:

-Crack eggs in bowl

-Add a little bit of salt to awaken the flavors and whisk well

-Add fillings to the already whisked egg

-Mix gently

-Coat baking pan with little vegetable oil

-Pour egg mixture in the pan

-Top it up with already fried plantain

-Garnish with red and green pepper stripes

-Bake in oven for 20mins
