with 100% white meat chicken filet, which is seasoned and breaded, topped with thick-cut smoked bacon, sweet and tangy BBQ sauce, fresh lettuce, ripe tomato, and creamy mayonnaise all on a potato bun. It is crispy on the outside, juicy on the inside.”

Ingredients

1/2 cup mayo
1/3 cup chopped dill pickles, plus 2 tsp. pickle juice
4 boneless, skinless chicken thighs (1 lb. total)
1/2 cup buttermilk
2 cups seasoned dried breadcrumbs
Canola oil
4 potato rolls, toasted
Lettuce
Sliced red onion

Preparation

In bowl, mix mayo, pickles and pickle juice. Season chicken; coat in buttermilk then breadcrumbs. In skillet, heat 1/2 inch oil over medium-high. Cook chicken through, 2 to 3 minutes per side. Build sandwiches with all ingredients.
